Fresh Apple Cake

2 cups sugar


2 eggs


1 teaspoon salt


1 teaspoon baking soda


2 teaspoons baking powder


1 teaspoon vanilla


2 1/2 cups all purpose flour


2 teaspoons cinnamon


1 cup oil


3 cups  cooking apples


1 cup pecans


1/2 - 1 cup raisens (optional)


 


Preheat oven to 350. Mix ingredients in order that they are listed. Batter will be thick. Pour into a greased and floured bundt or angelfood cake pan. Bake for 60 to 75 minutes. May take more time or less time as ovens may differ.


You can also put this glaze on top of the cake when it comes hot from the oven.


1/2 tsp cinnamon


1/2 cup sugar


1/2 cup milk of choice


1/4 cup butter or margarine


1/2 teaspoon vanilla


Mix all ingredients except vanilla and bring to a boil. Add vanilla after removing from heat. Pour over the cake while hot from the oven. Let this soak into the cake. If left too long, you may have to warm the cake to remove it from the pan.

Mmmm....that's one of my favorites!  We have it with cream cheese frosting on top but the glaze sounds yummy too!  I found the recipe ina little newspaper that had a recipe contest in 1978!  The Fresh Apple Cake was called German Apple Cake (but the same recipe) and won in its category!  It's one that needs to be in everyone's recipe box!
