Zucchini Jam (Breakfast spread)

Peel and shred zucchini enough for 6 cups.

Stew 15 minutes without water.
Add

5 cups white sugar
1 can crushed pineapple (not drained)
½ cup lemon juice

Boil six minutes. Remove from heat and add 1 large or 2 small jelly powders** (any flavor).

Stir until dissolved and bottle. 
Yield: 10 small jars
It will be runny but after placing in frig it will set.

OOOH, this looks interesting. My hubby's granny (95) is always looking for soemthing new to do with zucchini, and I don't recall her ever making a jam like this... thanks!
