We had a hot and sticky day yesterday - car got like an oven if parked for a couple of mins. Big storm o/nite Wendy (very scary). Today cool and windy. Go figure. Enjoy the weekend. Relax and enjoy. Stay safe. Hugs, Anne
While cooking peas, carrots, corn (or your favourite veggie) plus potatoes, saute chopped onions with a little oil in a largish pot. Add your favourite seasonings or herbs.
When lightly browned add minced beef and continue to saute. To the pan add veggies plus a little (not too much) of the liquid from the veggies. (Too much and the mixture will become soggy - should be loosely friable). Stir contents of pan.
Back to the potatoes! Mash with butter and seasoning to taste. Using a deep dish pour in contents of pan. Add mashed potatoes over top of meat. Now, if you are eating your product immediately, fork up little mounds on top of potatoes and add a little butter over the top and put in oven 'til slightly browned and a little crusty. If saving in fridge for later do the butter and browning once meal reheated. Enjoy!
Good afternoon Miss Anne - how is your weekend going? It's been raining off and on since yesterday and we even had a thunder storm It's only going up to 79 today - not like August weather. And where has time gone? I can't believe it's the end of Aug already. I did make it to the pool at a friend's house, but not to the beach. So you like Shepard's Pie, huh? An overnight rain shower brought some fresh air to our area , plus some cool temps also. I am really in a fall mood now. haha Always like to see fall coming in off and on as summer fades away gradually. Looking forward to September and all of its adventures.
