Hi Wendy, did you get any rain up your way? We've had 4 miserable days in a row with triple digit temps. We got a nice rain late last night and this morning it feels more pleasant out there. Maybe the worst of it is over with. A girl can hope anyway. I'm not surprised you've heard of the Crawdads book, it's set in your part of the country. It's actually set in the marshlands of coastal NC. It was a good book. I have students to tutor currently. I spend an hour a week with each. Meant to tell you I cracked my phone screen on my cell phone and had to file an insurance claim to replace it. When the new one came it was hard getting everything switched over. I have never had a phone damaged in all the years I've owned one. lol. Oh well I know how to do it now. Hope your day is good and you are keeping cool. love, Beth
Good Morning Wendy, haven't been at the Hill much lately myself. Thanks for the book graphics. That's me alright! Always have my nose in a book. lol. Just finished Where the Crawdads Sing which is a book that Reese Witherspoon chose for her book club. I didn't even know she had a book club till I found the book. What have you been up to? Hope you're keeping cool. It's been miserable here with high humidity. Do you use the refrigerated Pillsbury pizza dough from a can? I get that kind too that is sold near the canned biscuits. It's quite good. My favorite pizza is spinach and feta or mozzarella. My son made some chicken pizza last week with his new pizza stone he got but he used the dry pizza dough mix that you add water to. I have never used a pizza stone for baking pizzas but it worked out good and he plans to use it on the grill too at some point. Last weekend I went to Lowes with hubby and got more Levelor walnut blinds. They are faux wood of course but look real and are nice and sturdy. They are expensive so I just buy 2 or 3 at a time. Good Morning Wendy, it was a hot one here yesterday too. Not sure if we made it to 100 like you did but the humidity was dreadful. Mostly I'll be glad when August is over. Well you stir fry sounds good. I found a good easy recipe for the sauce you use with stir fry recently, just a basic sauce with corn starch as the thickener. It can be used for most any kind of stir fry I guess. I slept kind of late this morning and it felt good. Going out with the girls later for lunch and a bit of shopping. Hi Wendy, wow you went on an adventure didn't you? I will get lost so easily myself. If I don't have my phone I'd probably have to go back and get it. lol. I have no sense of direction whatsoever. At least you got some fruit and found somewhere to eat BBQ. Hope your food turns out good in the air fryer. Check Pinterest for some good ideas. It seems bone-in chicken turns out juicer than the breasts that I have tried in mine. Hubby found some beautiful squash and okra this week and brought it home. I'm over the worst of it now with my sinus infection but still not back to par with my energy so I've been lazy and neglecting housework. I need to get on the ball today and clean and mop my bathroom. I haven't watched Suits but I've been re-watching Outlander lately. I'm pretty obsessed with that show. haha. Have a wonderful day.
Hi Wendy, glad to hear you got an air fryer. I have not been thrilled with cooking any kind of frozen veggies in it. It seems to do best with fresh veggies and bone-in meat. I also did hamburer patties in it one night that were good. The best thing I've done is wings. I "preheat" it to 400 by turning it on for about 3-5 minutes first. I spray the fryer basket with non stick spray, I season, then flour my wings and lay them one layer deep in fryer. I fry the wings for exactly 25 minutes, flipping them over half way through. I also took some russet (baking) potatoes and cut them in large wedges. I seasoned them and rubbed olive oil on them then "fried" them for about 15-20 minutes. It also helps to "shake" the fryer basket from side to side occasionally during the cooking process. Hope this helps. Holler if you have any more questions. love, Beth

Hi Wendy, so good to hear from you. Wow what a blessing you are still here after what happened to you with the infection. I have always been paranoid about any infection from the neck up because of that exact scenario...very near the brain and that can get scary so fast. I have been on Amoxicillin since Wed and happy to report I am feeling much better. Also taking Mucinex DM for the congestion and it does help. Hope you are feeling better after your injection. My sister in law gets those once a month as well in her right eye. We are warm and sunny here so I am washing quilts to hang on the line again. Later I have to bathe the furbabies. Both my dogs sleep with me so washing them and bedclothes frequently is a must! It was nice to sleep last night and not cough my head off. We got Chinese takeout last night so I didn't have to cook. Haven't cooked much this whole week as a matter of fact. Guess I'll have to break down and do it now that I am better. haha. Hubby is thawing out some fish to fry for supper I think. I let him do that as he is set up outside to handle it all and there's less mess that way. Hope your weekend is good and I'll catch up with you soon. love, Beth
